Cinnamon Vanilla cupcakes

Sorry i have been out of commission lately y’all. Dave hasnt been feeling too well as well as I. Plus our dumb house is slowly falling apart on us. That along with a plucky 19 month old makes Tamale very tired.
I haven’t baked anything new lately, just chocolate chip cookies to make homemade ice cream sandwiches and cupcakes.
But i figured one can never have enough vanilla cupcakes. Its the most popular cupcake flavor in the world.
So I have a great recipe to share with you:
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup shortening, softened
- 3/4 cup whole milk or 2%
- 1 tablespoon vanilla extract
- 2 large eggs
- 1 tsp cinnamon, optional
Preheat oven to 350 degrees.
Mix flour and baking powder together in a medium bowl. Set aside.
Mix shortening and sugar together well. Add milk and vanilla. Add eggs in one at a time. Add the flour mixture in gradually, scraping sides of bowl.
Fill 3/4 in lined muffin pan. Bake at 20-22 minutes until a toothpick comes out clean. This recipe makes around 16.
Frost with favorite frosting or enjoy them alone!

Cupcakes are truly an amazing thing. I got some vanilla frosting “whipped body delights” at Sephora while in Dallas, and oh it’s so good to just slather all over the body. If I was dating a hot baker, he’d be all over me right about now.
Also, does Ms. Deen have a recipe for Cursing Cupcakes? Even me, The Single Person Who Does Not Cook, would try that.
